It’s mid week Ladies and Gents and I thought I would show some love for Wednesday and post a recipe I LOVE LOVE LOVE (and actually eating as I write this)..It’s not my own personal recipe and all credit goes to which is one of the best sites when I wanna get my Betty Crocker on.

Tuscan Bean Goppel

Prep:10 min   Cook:5 min  Ready In:15 min


2 (15.5 ounce) cans cannellini beans, drained

1 (14.4 ounce) can petite diced tomatoes

1 tablespoon  virgin (or extra virgin) olive oil

2 garlic cloves, chopped (sometimes I add more or less depending on my mood)

1 pinch of red pepper flakes (optional)

1/4 cup feta cheese

1/4 cup chopped fresh cilantro

In a medium saucepan combine the olive oil, beans, tomatoes, red pepper flakes, garlic . Stir until the mixture bubbles. Remove from heat and stir in the feta cheese and cilantro.


TADA! This recipe is so easy and it makes at least two hearty servings. I eat it solo but feel free to complement it with other sides or  glass of Jesus juice..who doesn’t like wine?!?!?
